Aromatised Stone-In Olives

We can produce and supply bespoke aromatised stone-in olive mixes to suit every type of outlet and budget and we have a mix for every business.

We believe that the stone is the heart of the olive, it’s an important part of the eating experience because it preserves the olive’s flavour, texture and shape.

For our aromatised green olives, we use Beldi Olives from Marrakesh.  These are carefully graded, then cracked between rollers to break the skin.  This allows a perfect infusion of the marinade into the olive flesh and stone, without losing any flavour from the olive itself.  Try our classic pistou olives – with basil and garlic or our lemon, basil and mint mix, for something a little lighter.

Most black olives available in the UK market are dyed black with ferrous gluconate – ours aren’t. All Fresh Olive black olives are naturally ripened, from Marrakesh and Greece.  The olives are fully ripened in the sun before pricking and curing. Pricking the skins of the olives allows the flavours to infuse the flesh.  Try our black Douce olives from Marrakesh with chilli or for a mix of black and green olives, we highly recommend the Casablanca mix – green Beldi and purple Coquillos olives with chilli, garlic and cumin.
