If you are looking to add a powerful aroma to risotto, we can supply dried wild cepes or as an alternative, try our Garniture Forestière, which provides a handy, traditional selection of whole, dried woodland mushrooms including boletus, pleurotte and cepes ideal for adding flavour to soups and stews.
We have roasted cardoncelli mushrooms in olive oil - so named because they grow around cardoons thistles in Tuscany. These mushrooms have a firm texture and subtle flavour.
For an indulgent extra you might enjoy our truffle oils; white truffle oil and black truffle oil as well as our white truffle and porcini cream - a smooth paste made from porcini mushrooms and white truffles from Alba - perfect for stirring through a risotto at the last minute before serving. Or, try our black truffle and mushroom salsa, a rich paste ideal for swirling through a sauce.
